Welsh cakes:

225g/8 oz sr flour sieved

110g/4 oz salted butter (welsh)

1 egg

Hand full of sultanas

Milk if  ( if needed)

85g/3 oz caster sugar

Extra butter for greasing

Method:

Rub fat and sieve flour to wake breadcrumbs.
Add surgery, dried fruit and then egg, mix to combine the form a ball of dough,using a splash of milk if needed.
Put your dough  now in the freezer for 10 minutes or in the fridge for 30 minutes
Roll out dough to 5mm/ 1/4" thick cut into circles
Bake-stone or Heavy baked  in the frying pan.
Rub with butter and wipe excess away. 
 Put it on direct heat.
(2-3)minutes both sides
Remove from griddle+ baste with sugar
